Ingredients

4 cod fillets (about 6 ounces each)

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

2 large eggs

2 tablespoons Dijon mustard

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Coating: In a mixing bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, onion powder, oregano, smoked paprika, salt, and pepper. Mix well until evenly combined.

Prepare the Egg Mixture: In another bowl, whisk together the eggs and Dijon mustard until well-blended.

Coat the Cod: Pat dry the cod fillets with paper towels. Dip each fillet first into the egg mixture, allowing any excess to drip off, then coat it in the panko-Parmesan mix, pressing down to ensure the coating sticks. Place the coated fillets on the prepared baking sheet.

Drizzle with Olive Oil: Lightly drizzle the tops of the cod fillets with olive oil to help them achieve a golden, crispy texture.

Bake: Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and the topping is golden brown.

Serve: Remove from the oven, and garnish with fresh parsley. Serve hot with lemon wedges on the side for a refreshing zing.
