4 large carrots, peeled and thinly sliced into rounds

1/4 cup olive oil

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, quartered

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup sour cream or Greek yogurt (optional)

1 jalapeño, sliced (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

    Prepare Carrots: In a large bowl, toss the thinly sliced carrot rounds with olive oil, garlic powder, onion powder, paprika, salt, and black pepper until evenly coated.
