Crispy Panko Baked Cod with Herb Sauce

For the Crispy Panko Baked Cod:

4 cod fillets (about 6 oz each)

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1/4 cup grated Parmesan cheese

3 tablespoons olive oil

For the Herb Sauce:

1 cup fresh parsley leaves

1/2 cup fresh basil leaves

1/4 cup fresh dill leaves

1 clove garlic, minced

1 tablespoon lemon juice

1/2 teaspoon Dijon mustard

1/3 cup olive oil

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cod: Pat the cod fillets dry with paper towels and season them with salt and pepper. Set aside.

      Set Up Breading Station: In one shallow bowl, place the flour. In another bowl, whisk the eggs until well combined. In a third bowl, combine the panko breadcrumbs, garlic powder, paprika, Parmesan cheese, and a pinch of salt and pepper.

        Bread the Cod: Dip each cod fillet first in the flour, shaking off any excess, then in the egg, allowing the excess to drip off, and finally in the panko mixture, pressing gently to adhere the breadcrumbs to the fish.
