Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup tortilla chips, crushed into small pieces

1 cup shredded cheddar cheese (or your favorite nacho cheese blend)

1/2 cup cornmeal

1/2 cup all-purpose flour (or gluten-free alternative)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (optional, for heat)

2 large eggs

1/4 cup milk (or plant-based milk)

Salt and pepper to taste

1/4 cup chopped fresh cilantro (for garnish)

1 avocado, diced (for garnish)

1 cup salsa (for serving)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

Prepare Cauliflower: In a large mixing bowl, combine cauliflower florets, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Toss well to coat the florets evenly with the spices.

Breading Station: In another bowl, whisk together the eggs and milk until smooth. In a third bowl, mix together the flour and cornmeal.

Coat Cauliflower: Dip each cauliflower floret first into the egg mixture, allowing excess to drip off, then coat thoroughly in the flour and cornmeal mixture, ensuring a good layer sticks. Finally, roll each floret in the crushed tortilla chips for a crunchy outside.

Arrange and Bake: Place the breaded cauliflower pieces onto the prepared baking sheet in a single layer. Spray lightly with cooking spray for extra crispiness. Bake for about 25-30 minutes, flipping halfway, until golden brown and crispy.

Melt the Cheese: In the last 5 minutes of baking, sprinkle the shredded cheese generously over the crispy cauliflower. Return to the oven until the cheese is melted and bubbly.

Serve: Remove from the oven and let cool slightly. Garnish with chopped cilantro and diced avocado. Serve hot with salsa on the side.

Enjoy: Dig in and enjoy your Crispy Nacho Cheese Cauliflower as a perfect party snack or a fun side dish!
