1 teaspoon dried thyme

1/2 teaspoon black pepper

Prepare the Potatoes: Start by washing and scrubbing the russet potatoes thoroughly. Cut each potato into wedges (about 8 wedges per potato) and place them in a large bowl.

    Season the Wedges: In a small bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, oregano, thyme, salt, black pepper, and cayenne pepper. Pour this mixture over the potato wedges, tossing them until they are evenly coated.

      Preheat the Skillet: Heat a large cast-iron skillet over medium-high heat. Once hot, add the potato wedges in a single layer. You may need to work in batches if your skillet can't accommodate all wedges at once.
