Crispy Garlic Tofu Bowls

14 oz (400g) firm tofu, pressed and cubed

2 tablespoons cornstarch

3 tablespoons vegetable oil (for frying)

4 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon maple syrup (or agave nectar)

2 cups cooked brown rice or quinoa

1 cup broccoli florets

1 cup bell peppers, sliced (any color)

1 cup shredded carrots

3 green onions, chopped

Sesame seeds, for garnish

Fresh cilantro, for garnish

Salt and pepper, to taste

Instructions
 

Prep the Tofu: Start by pressing the tofu for at least 15 minutes to remove excess moisture. Once pressed, cut the tofu into bite-sized cubes and season with salt and pepper.

    Coat the Tofu: In a large bowl, toss the cubed tofu with cornstarch until evenly coated. This will help achieve that crispy texture when fried.

      Fry the Tofu: In a large skillet or frying pan, heat the vegetable oil over medium-high heat. Add the tofu cubes in a single layer, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden and crispy. Remove from the pan and set aside on a paper towel-lined plate.

        Prepare the Sauce: In the same pan (add a little more oil if needed), reduce the heat to medium and add the minced garlic. Sauté for about 1 minute, until fragrant but not burned.

          Combine Sauce Ingredients: Add the soy sauce, sesame oil, rice vinegar, and maple syrup to the pan. Stir well and allow the sauce to simmer for about 2-3 minutes.

            Toss the Tofu: Return the crispy tofu to the pan and toss gently in the garlic sauce until well coated. Cook for another 2-3 minutes to heat through.

              Cook the Vegetables: In a separate pot, steam or sauté the broccoli florets, bell peppers, and shredded carrots until tender-crisp, about 5-7 minutes.

                Assemble the Bowls: In serving bowls, start with a base of brown rice or quinoa. Top with the garlic tofu and then add the mixed vegetables.

                  Garnish and Serve: Sprinkle with chopped green onions, sesame seeds, and fresh cilantro. Serve immediately and enjoy your delicious crispy garlic tofu bowls!
