4 medium russet potatoes

1/4 cup olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 cup shredded cheddar cheese (optional)

1/4 cup sour cream (for serving)

2 green onions, chopped (for garnish)

Instructions
 

Preheat the oven: Start by preheating your oven to 400°F (200°C).

    Prepare the potatoes: Wash the russet potatoes thoroughly under cold water. Dry them with a towel and poke several holes all over each potato with a fork. This will allow steam to escape during baking.

      Bake the potatoes: Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are cooked through and tender. You can test this by inserting a fork or knife into the center; it should slide in easily.

        Prepare the garlic oil: While the potatoes are baking, combine the olive oil, minced garlic, smoked paprika, sea salt, and black pepper in a small bowl. Mix well and let it sit to infuse the flavors.

          Scoop and cut: Once the potatoes are cooked, remove them from the oven and let them cool for about 10 minutes until they are manageable to handle. Slice each potato in half lengthwise and carefully scoop out some of the flesh, leaving about 1/4 inch of potato around the skins.

            Brush with garlic oil: Place the potato halves on a baking sheet, cut side up. Brush each skin generously with the garlic oil mixture, ensuring they are well coated.

              Crisp up the skins: Flip the potato halves over, brush the skin side with a bit more of the garlic oil, and return them to the oven, skin side down. Bake for an additional 15-20 minutes, or until the skins are crispy and golden brown.

                Add cheese (optional): If using, sprinkle shredded cheddar cheese on top of the hot potato skins in the last few minutes of baking and return to the oven until melted.
