Ingredients

1 lb (450g) large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon lemon juice

1 tablespoon fresh parsley, chopped (plus more for garnish)

Salt and pepper, to taste

1 cup panko breadcrumbs

1 tablespoon vegetable oil (for frying)

Lemon wedges (for serving)

Instructions

Prepare the Shrimp: In a bowl, season the shrimp with salt, pepper, and lemon juice. Set aside to marinate for about 10 minutes.

Make the Garlic Butter: In a skillet over medium heat, melt the unsalted butter. Add the minced garlic and red pepper flakes, sautéing for 1-2 minutes until the garlic is fragrant but not browned. Remove from the heat and stir in chopped parsley. Set aside.

Coat the Shrimp: In a shallow dish, place the panko breadcrumbs. Dip each shrimp in the garlic butter mixture, then coat thoroughly with the panko breadcrumbs, pressing down slightly to ensure the breadcrumbs adhere.

Fry the Shrimp: In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the panko-coated shrimp in batches, avoiding overcrowding the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Toss in Garlic Butter: In a clean bowl, toss the crispy shrimp with the remaining garlic butter, ensuring they are well-coated.

Serve: Plate the garlic butter shrimp, garnishing with additional parsley and serving with lemon wedges on the side for an extra zesty kick. Enjoy!
