Crispy Falafel Veggie Wrap

Ingredients
  

For the Falafel:

1 cup dried chickpeas (soaked overnight)

1/2 small onion, chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

Oil for frying

For the Veggie Wrap:

4 large whole wheat or spinach wraps

1 cup lettuce, shredded

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1 carrot, julienned

1/2 red bell pepper, thinly sliced

1/4 red onion, thinly sliced

1 avocado, sliced

1/2 cup tahini sauce or tzatziki sauce

Optional Garnishes:

Lemon wedges

Fresh herbs (parsley or cilantro)

Instructions
 

Prepare the Falafel Mixture:

    - Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Process until you achieve a coarse mixture (do not over-blend).

      Form the Falafel Balls:

        - Scoop about 1-2 tablespoons of the mixture and shape it into small balls or patties. Place them on a tray lined with parchment paper.

          Fry the Falafel:

            - In a large skillet or deep frying pan, heat oil over medium heat. Once hot, add the falafel balls in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side until golden brown and crispy. Drain on paper towels.

              Assemble the Wraps:

                - Lay each wrap on a clean surface. Start with a generous layer of lettuce, followed by the diced cucumber, cherry tomatoes, carrot, red bell pepper, and red onion. Add the crispy falafel balls and top with avocado slices.

                  Add Sauce:

                    - Drizzle the tahini sauce or tzatziki sauce over the top of the filled wraps.

                      Wrap and Serve:

                        - Fold the sides of the wrap inwards and roll tightly from the bottom up. Cut in half before serving. Optionally, serve with lemon wedges and additional fresh herbs on the side.
