1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup unsweetened shredded coconut

1/2 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional, for heat)

1/2 cup coconut milk

Cooking oil for frying (such as vegetable or coconut oil)

Prepare the Chicken: In a large bowl, combine the chicken pieces with coconut milk, ensuring each piece is well coated. Marinate for at least 30 minutes for maximum flavor.

    Set Up Breading Stations: In three shallow dishes, place the flour in the first, beaten eggs (lightly whisked) in the second, and a mixture of shredded coconut, panko breadcrumbs, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper in the third. Mix well to combine the coconut and breadcrumbs evenly.

      Bread the Chicken: Remove marinated chicken from the coconut milk one piece at a time. First, coat each piece in flour, shaking off excess, then dip in the beaten eggs, and finally roll in the coconut-breadcrumb mixture. Press gently to ensure the coating sticks well. Set aside on a plate.
