Crispy Chicken Avocado Wraps

2 large chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

2 teaspoons garlic powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 ripe avocado, sliced

1 large tomato, diced

1 cup romaine lettuce, chopped

¼ cup ranch dressing (or your choice of dressing)

4 large whole wheat tortillas

Olive oil for frying

Optional: Lime wedges and fresh cilantro for garnish

Marinate the Chicken: In a bowl, place the chicken breasts and cover them with buttermilk. Allow them to marinate in the fridge for at least 1 hour (or overnight for deeper flavor).

    Prepare Coating: In a separate bowl, mix together the flour, garlic powder, paprika, salt, and black pepper. In another bowl, place the panko breadcrumbs.

      Coat the Chicken: Take the marinated chicken out of the buttermilk and let the excess drip off. Dredge each piece in the seasoned flour, shaking off the excess. Then, dip it back into the buttermilk before coating with panko breadcrumbs, pressing gently to adhere.
