Crispy Chicken Avocado Rice Wraps

2 cups cooked jasmine rice

1 lb chicken breast, cut into strips

1 ripe avocado, sliced

1 cup shredded lettuce (green or purple)

1/2 cup diced tomatoes

1/4 cup diced red onion

1/2 cup shredded cheese (Cheddar or Monterey Jack)

1/4 cup mayonnaise

2 tablespoons lime juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 large rice paper wraps

Cooking oil for frying

Marinate the Chicken: In a bowl, combine chicken strips, garlic powder, smoked paprika, lime juice, salt, and pepper. Allow to marinate for at least 15 minutes for better flavor absorption.

    Cook the Chicken: Heat a couple of tablespoons of cooking oil in a skillet over medium-high heat. Add the chicken strips and cook for about 5-7 minutes, until golden brown and cooked through. Remove from heat and set aside.

      Prepare the Rice Paper Wraps: In a large shallow bowl or plate, fill it with warm water. Dip one rice paper wrap in the water for about 10-15 seconds until it softens but not too mushy. Carefully place it on a clean surface.

        Assemble the Wraps: On the lower third of the softened rice paper wrap, layer:

          - 1/2 cup of cooked jasmine rice

            - A few strips of cooked chicken

              - 1-2 slices of avocado

                - A handful of shredded lettuce

                  - A sprinkle of diced tomatoes

                    - A few pieces of diced red onion

                      - A sprinkle of shredded cheese

                        Drizzle a little mayonnaise on top if desired.

                          Wrap It Up: Fold the sides of the rice paper wraps over the filling, then roll it away from you, ensuring the filling is tightly enclosed. Repeat this process for the remaining wraps.

                            Fry the Wraps (Optional): If you want your wraps crispy, heat oil in a pan over medium heat. Place the assembled rice wraps seam side down in the hot oil. Fry for 2-3 minutes on each side or until golden and crispy. Remove and drain on paper towels to remove excess oil.

                              Serve: Cut the wraps in half, arrange them on a plate, and serve with additional lime wedges and any dipping sauce of your choice (like sweet chili sauce or sriracha mayo) for added flavor.
