Crispy Cheddar Scallion Pancakes

1 cup all-purpose flour

1/2 cup hot water

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 cup sharp cheddar cheese, grated

1/3 cup scallions (green onions), finely chopped

2 tablespoons vegetable oil (for frying)

Optional: soy sauce or spicy dip for serving

Instructions
 

Make the Dough: In a mixing bowl, combine the flour, salt, and baking powder. Gradually pour in the hot water, stirring with a fork or chopsticks until the mixture forms a shaggy dough. Let it sit for about 10 minutes to relax.

    Prepare the Filling: While the dough is resting, mix the grated cheddar cheese and chopped scallions in a small bowl. This will serve as your delicious filling.

      Roll Out the Dough: Lightly flour a clean surface and divide the dough into 2 equal pieces. Roll out the first piece into a thin circle, about 8 inches in diameter.

        Add the Filling: Sprinkle half of the cheese and scallion mixture evenly over the rolled-out dough. Starting from one side, roll the dough tightly into a log shape. Then, coil the log into a spiral shape, tucking the end underneath.

          Flatten the Pancake: Gently press down the spiral with your palm, then use a rolling pin to flatten it again into a 6-inch pancake, being careful not to squish out the filling.

            Fry the Pancake: Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Once hot, add the pancake and cook for about 3-4 minutes on each side or until golden brown and crispy. If needed, add more oil when you flip it.

              Repeat for the Second Pancake: Use the same technique for the second piece of dough and filling.

                Serve: Cut the crispy pancakes into wedges and serve warm with soy sauce or your choice of spicy dip.
