Prepare the Broccoli Mixture: In a large mixing bowl, combine the finely chopped broccoli, shredded cheddar cheese, cream cheese, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
Roll Out the Dough: On a lightly floured surface, roll out the pie dough or puff pastry until it's thin. Cut into squares (approximately 5x5 inches).
Fill the Squares: Spoon some of the broccoli cheese mixture into the center of each square, about 2 tablespoons per piece.
Fold and Seal: Carefully fold the squares over the filling to create triangles or rectangles, ensuring the edges align. Press the edges together firmly with your fingers, and then use a fork to crimp the edges for extra sealing.
Egg Wash: Brush the tops of each folded pastry with the beaten egg to give it a beautiful golden color while cooking.
Preheat Air Fryer Basket: Lightly spray the air fryer basket with cooking spray if desired, then place the filled pastries in the basket in a single layer, making sure there’s space between each for air circulation.
Cook: Air fry the broccoli cheese folds at 375°F (190°C) for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.
Cool and Serve: Remove the crispy folds from the air fryer and let them cool for a couple of minutes. Serve warm with your favorite dipping sauce or enjoy them as is!
