1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

½ cup cornstarch

1 tsp garlic powder

1 tsp onion powder

½ tsp cayenne pepper (adjust for spice preference)

Salt and black pepper to taste

Oil for frying (vegetable or peanut oil)

For the Bang Bang Sauce:

⅓ cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust for spice preference)

1 tsp honey

1 tsp lime juice

Marinate the Chicken: In a large bowl, combine the buttermilk, salt, and pepper. Add the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 1 hour (up to overnight for best flavor).

    Prepare the Coating: In a separate bowl, mix together the flour, cornstarch, garlic powder, onion powder, cayenne pepper, and a pinch of salt and pepper.

      Heat the Oil: In a deep frying pan or pot, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping in a small piece of batter; if it sizzles and rises immediately, the oil is hot enough.

        Coat the Chicken: Remove the marinated chicken from the refrigerator. Dredge each piece in the flour mixture, making sure it’s evenly coated. Shake off any excess flour.

          Fry the Chicken: Carefully place the coated chicken pieces into the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 5-7 minutes, or until golden brown and cooked through, turning occasionally for even cooking. Use a slotted spoon to transfer the fried chicken to a paper towel-lined plate to drain excess oil.
