Crispy Baked Veggie Nuggets

1 cup broccoli florets, finely chopped

1 cup cauliflower florets, finely chopped

1 cup carrots, grated

1 cup cooked quinoa (or rice)

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup all-purpose flour (or chickpea flour for a gluten-free alternative)

2 large eggs (or flaxseed eggs for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Cooking spray or olive oil for baking

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the finely chopped broccoli, cauliflower, and grated carrots. Add the cooked quinoa, breadcrumbs, grated Parmesan cheese, and flour.

      In a separate bowl, whisk together the eggs, garlic powder, onion powder, paprika, salt, and pepper until well combined.

        Pour the egg mixture into the bowl with the veggies and mix until everything is evenly coated and holds together. If the mixture appears too wet, add a bit more flour or breadcrumbs until it can be easily formed into nuggets.

          Shape the mixture into small nugget-sized patties, about 1-2 inches wide. Place them onto the prepared baking sheet.

            Spray the tops of the veggie nuggets lightly with cooking spray or brush with olive oil to achieve a crispy texture when baking.

              Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy on both sides.

                Once baked, remove from the oven and let them cool slightly. Serve warm with your favorite dip, such as honey mustard, BBQ sauce, or a yogurt-based dip.
