Ingredients

1 pound chicken tenders

1 cup buttermilk

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for some heat)

2 tablespoons olive oil

For Honey Mustard Dip:

1/4 cup Dijon mustard

1/4 cup honey

1 tablespoon apple cider vinegar

Salt and pepper, to taste

Instructions

Marinate the Chicken: In a large bowl, combine the chicken tenders and buttermilk. Cover and refrigerate for at least 1 hour (or overnight for more flavor).

Prepare the Coating: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a shallow dish, mix the panko breadcrumbs, flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. Drizzle the olive oil over the breadcrumb mixture and mix well until evenly coated.

Coat the Chicken: Remove the chicken from the buttermilk and allow excess to drip off. Dredge each chicken tender in the breadcrumb mixture, pressing firmly to ensure a good coating. Place breaded tenders on the prepared baking sheet.

Bake the Chicken Tenders: Bake in the preheated oven for 20-25 minutes or until the chicken is golden brown and the internal temperature reaches 165°F (75°C). For extra crispiness, broil for an additional 1-2 minutes at the end, keeping a close eye to prevent burning.

Make the Honey Mustard Dip: In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, and season with salt and pepper to taste. Adjust sweetness or tanginess as desired.

Serve: Remove the chicken tenders from the oven and let them rest for a couple of minutes. Serve warm with the honey mustard dip on the side. Enjoy your crispy, succulent chicken tenders!
