Crispy Bacon & Egg Breakfast Grilled Cheese

Ingredients
  

4 slices of sourdough bread

4 slices of sharp cheddar cheese

4 slices of crispy bacon

2 large eggs

2 tablespoons of unsalted butter

Salt and pepper, to taste

Optional: Hot sauce or avocado slices for topping

Instructions
 

Cook the Bacon:

    In a skillet over medium heat, cook the bacon until it's crispy. Once cooked, transfer the bacon to a plate lined with paper towels to drain.

      Fry the Eggs:

        In the same skillet (drained of excess grease), crack the eggs and season with salt and pepper. Fry them sunny-side up for about 2-3 minutes, until the whites are set but the yolk is still runny.

          Assemble the Sandwich:

            On a slice of sourdough bread, lay down 1 slice of cheddar cheese. Top it with 2 slices of crispy bacon, followed by a fried egg. Add another slice of cheddar cheese on top, and finish with another slice of sourdough bread.

              Grill the Sandwich:

                Heat 1 tablespoon of butter in the skillet over medium-low heat. Once melted, place the assembled sandwich in the skillet. Grill for about 3-4 minutes, or until golden brown.

                  Flip and Grill the Other Side:

                    Carefully flip the sandwich using a spatula. Add the remaining tablespoon of butter around the edges, allowing it to melt. Grill the other side for another 3-4 minutes, until it’s golden and the cheese is melted.

                      Serve:

                        Remove the sandwich from the skillet and let it sit for a minute. Slice it in half and serve hot, optionally adding hot sauce or avocado slices on the side.
