Crispy Air-Fryer Taco Rolls

Ingredients
  

1 lb ground beef (or any ground meat of your choice)

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning

1/2 cup black beans, rinsed and drained

1/2 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

8 large flour tortillas

Cooking spray or olive oil

Optional toppings: sour cream, salsa, chopped cilantro, avocado slices

Instructions
 

Cook the Filling: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it up with a spatula. Drain any excess fat.

    Add Aromatics: Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.

      Season: Stir in the taco seasoning, black beans, and corn. Cook for another 2-3 minutes until everything is heated through. Remove from heat and let it cool slightly.

        Assemble the Rolls: On a clean work surface, place a tortilla and add about 2-3 tablespoons of the taco filling in the center. Sprinkle a tablespoon of shredded cheese on top. Roll the tortilla tightly, ensuring the filling is secure. Repeat with the remaining tortillas.

          Prepare for Air Frying: Lightly spray the air fryer basket with cooking spray. Place the rolled tacos seam-side down in the basket, ensuring they do not touch (you may need to cook in batches). Lightly spray the tops of the rolls with oil.

            Air-Fry: Preheat the air fryer to 375°F (190°C). Cook the taco rolls for 8-10 minutes, turning halfway through, until they are golden brown and crispy.

              Serve: Remove from the air fryer and let them cool for a couple of minutes. Serve hot with your choice of toppings like sour cream, salsa, cilantro, or avocado slices.
