4 medium zucchinis, chopped

1 large onion, diced

3 garlic cloves, minced

2 cups vegetable broth

1 cup heavy cream (or coconut milk for a vegan option)

1 tablespoon olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: 1/2 teaspoon chili flakes for a kick

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent (about 5 minutes). Stir in the minced garlic and cook for an additional minute, being careful not to burn it.

    Cook the Zucchini: Add the chopped zucchinis to the pot. Sauté for about 8-10 minutes, stirring occasionally until they’re tender. If you’re using chili flakes, add them at this stage.

      Add the Broth: Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for another 10 minutes, allowing the flavors to meld together.
