2 cups cooked white beans (cannellini or northern beans)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 cup fresh spinach or kale, chopped

1 tsp dried thyme

1 tsp dried rosemary

½ tsp red pepper flakes (adjust to taste)

4 cups vegetable broth

1 cup full-fat coconut milk or heavy cream

2 tbsp olive oil

Salt and pepper to taste

Zest of 1 lemon (for garnish)

Fresh parsley, chopped (for garnish)

Crusty bread or croutons (for serving)

Instructions
 

Sauté the Aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic, diced carrots, and celery. Cook for another 4-5 minutes until the vegetables are softened.

    Add the Beans and Spices: Stir in the cooked white beans, thyme, rosemary, and red pepper flakes. Cook for 2 minutes, allowing the spices to bloom.

      Pour in the Broth: Add the vegetable broth and bring the mixture to a gentle simmer. Let it cook for about 10-15 minutes so the flavors can meld together.

        Blend for Creaminess: Using an immersion blender, blend about half of the soup directly in the pot to create a creamy texture while keeping some whole beans and vegetables for nice texture. If you don’t have an immersion blender, carefully transfer half of the soup to a regular blender, blend until smooth, and return it to the pot.

          Finish with Creaminess: Stir in the coconut milk (or heavy cream) and let the soup heat through. Adjust seasoning with salt and pepper to taste. If the soup is too thick, you can add a little more broth or water to achieve your desired consistency.
