Creamy Turkey Stuffed Peppers

4 large bell peppers (any color)

1 pound ground turkey

1 cup cooked rice (white or brown)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them upright in a baking dish.

      In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.

        Add the ground turkey to the skillet. Cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.

          Stir in the diced tomatoes, cooked rice, softened cream cheese, and Italian seasoning. Mix until the cream cheese is fully melted and incorporated. Season with salt and pepper to taste.

            Carefully spoon the turkey mixture into each bell pepper, packing it down slightly to fit all the filling.

              Top each stuffed pepper with shredded mozzarella cheese for a melty finish.

                Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, until the peppers are tender and the cheese is golden and bubbly.

                  Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
