Creamy Tomato Spinach Tortellini

12 oz fresh or frozen cheese tortellini

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

1 teaspoon Italian seasoning

1 cup heavy cream

3 cups fresh spinach, roughly chopped

½ cup grated Parmesan cheese

Salt and pepper to taste

Optional: Fresh basil leaves for garnish

Cook the Tortellini: In a large pot of boiling salted water, cook the tortellini according to package directions until al dente. Drain and set aside.

    Sauté the Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté until fragrant, about 1 minute.

      Add Tomatoes and Seasoning: Stir in the diced tomatoes (with their juices) and Italian seasoning. Let it simmer for about 3-4 minutes, allowing the flavors to meld.

        Create the Creamy Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine, allowing the sauce to thicken slightly for about 2-3 minutes.

          Add Spinach: Gradually add the chopped spinach to the sauce, stirring until it wilts and reduces in volume, about 2-3 minutes.

            Combine Tortellini and Sauce: Add the cooked tortellini to the sauce, gently folding it in to ensure all the pasta is coated evenly. If the sauce is too thick, you can add a splash of pasta water to reach your desired consistency.

              Cheese Time: Stir in the grated Parmesan cheese, mixing until melted and incorporated. Season with salt and pepper to taste.

                Serve: Remove from heat and serve immediately. Garnish with fresh basil leaves if desired.
