Creamy Tomato Spinach Pasta

8 oz (225g) pasta of your choice (penne or fettuccine works well)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup heavy cream

1 cup fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Red pepper flakes (optional for heat)

Fresh basil for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Tomatoes: Pour in the diced tomatoes with their juices. Stir in the Italian seasoning, salt, and pepper. Allow the mixture to cook for about 5-7 minutes, simmering gently.

        Incorporate the Cream: Reduce heat to low and gradually stir in the heavy cream. Mix well until the sauce is creamy and combined. If it's too thick, add a little reserved pasta water until your desired consistency is reached.

          Mix in Spinach & Cheese: Fold in the chopped spinach and grated Parmesan cheese, stirring until the spinach wilts and the cheese melts into the sauce. Taste and adjust seasoning if necessary, adding red pepper flakes for some heat if desired.

            Combine Pasta & Sauce: Add the cooked pasta to the sauce, tossing to coat thoroughly. If the sauce is too thick, add more reserved pasta water a tablespoon at a time until it reaches the desired creaminess.
