1 medium onion, diced

3 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1 (28-ounce) can crushed tomatoes

4 cups vegetable or chicken broth

1 cup heavy cream

1 package (16 ounces) gnocchi (fresh or frozen)

1 cup fresh spinach, chopped

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot over medium heat, add the olive oil. Once heated, add the diced onion, carrot, and celery. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened.

    Add Garlic and Spices: Stir in the minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Cook for an additional 1-2 minutes, until fragrant.

      Incorporate Tomatoes and Broth: Pour in the crushed tomatoes and vegetable or chicken broth. Stir well to combine everything. Bring the mixture to a gentle simmer and let it cook for about 10 minutes.

        Add the Cream: Lower the heat and stir in the heavy cream. Mix until fully incorporated. Allow it to simmer on low for another 5 minutes.

          Cook the Gnocchi: Add the gnocchi to the pot and let it cook according to package instructions (usually about 2-3 minutes for fresh gnocchi, or a bit longer for frozen). Stir occasionally until the gnocchi are tender and float to the top.

            Finish with Spinach: Stir in the chopped spinach and allow it to wilt for about 1-2 minutes. Season the soup with salt and pepper to taste.

              Serve: Ladle the soup into bowls and top with grated Parmesan cheese and fresh basil leaves for garnish.
