Creamy Tomato Basil Quinoa Bake

Ingredients
  

1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 (15 oz) can crushed tomatoes

1 cup fresh basil leaves, chopped

1 cup heavy cream (or coconut cream for a dairy-free option)

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon pepper

2 tablespoons olive oil

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.

      Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add the rinsed quinoa, vegetable broth, crushed tomatoes, dried oregano, salt, and pepper to the saucepan. Bring to a boil, then reduce the heat to low and cover. Let it simmer for about 15 minutes, or until the quinoa is cooked and has absorbed most of the liquid.

          Once the quinoa is cooked, remove it from heat and stir in the chopped fresh basil, heavy cream, mozzarella cheese, and grated Parmesan cheese until well combined.

            Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle extra mozzarella cheese on top for an ooey-gooey texture.

              Bake in the preheated oven for 20-25 minutes, or until the top is bubbly and golden brown.

                Remove the dish from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
