12 oz (340g) pasta (fettuccine or penne works best)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (15 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon dried basil (or 1/4 cup fresh basil, chopped)

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

3 cups fresh spinach

1/2 cup grated Parmesan cheese (plus more for serving)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining. Set aside.

    Sauté Garlic: In a large skillet or saucepan over medium heat, heat the olive oil. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Tomatoes and Cream: Pour in the crushed tomatoes, stirring to combine. Add the heavy cream, mixing well. Let the mixture simmer for about 5 minutes, reducing slightly.

        Season the Sauce: Incorporate the dried basil, red pepper flakes (if using), salt, and pepper. Adjust the seasoning to taste and let the sauce continue to simmer for another 5 minutes.
