Creamy Tomato Avocado Pasta

12 oz (340g) pasta (spaghetti or fettuccine preferred)

2 ripe avocados, pitted and peeled

1 can (14 oz) crushed tomatoes

3 cloves garlic, minced

1 medium onion, finely chopped

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

1/4 cup fresh basil, chopped (plus extra for garnish)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Zest and juice of 1 lemon

Chili flakes (optional, for a spicy kick)

Pinch of sugar (to balance acidity)

Instructions
 

Cook the Pasta:

    In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

      Prepare the Sauce:

        In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then add the minced garlic and cook for another 1-2 minutes until fragrant.

          Add Tomatoes and Season:

            Stir in the crushed tomatoes, Italian seasoning, salt, pepper, and a pinch of sugar. Let the mixture simmer for about 5-7 minutes, stirring occasionally.

              Blend the Avocado:

                In a blender or food processor, combine the avocados, lemon zest, lemon juice, and half of the chopped basil. Add a pinch of salt and blend until smooth and creamy.

                  Combine:

                    Once the tomato sauce has simmered, reduce the heat to low and add the creamy avocado blend to the sauce, mixing until fully incorporated. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

                      Toss with Pasta:

                        Add the cooked pasta to the skillet, tossing it in the creamy sauce until well coated. Cook for an additional minute to warm everything through.

                          Serve:

                            Divide the creamy tomato avocado pasta into bowls. Top with grated Parmesan cheese, remaining basil, and chili flakes if desired. Enjoy warm!
