Ingredients

2 ripe avocados, pitted and peeled

4 medium ripe tomatoes, diced

1 small cucumber, peeled and chopped

1 cup vegetable broth

1 cup coconut milk (or heavy cream for a richer taste)

1 clove garlic, minced

1 tablespoon fresh lime juice

1 teaspoon ground cumin

1/2 teaspoon paprika

Salt and pepper to taste

Fresh cilantro or basil leaves for garnish

Optional: pinch of red pepper flakes for heat

Instructions

Blend the Base: In a blender, combine the avocados, diced tomatoes, chopped cucumber, vegetable broth, coconut milk, minced garlic, and lime juice. Blend until smooth and creamy.

Seasoning: Add the ground cumin, paprika, salt, and pepper to the blender. Blend again briefly to incorporate the spices. Taste and adjust seasoning as necessary. If you prefer a little kick, add red pepper flakes.

Chill: Transfer the soup to an airtight container and refrigerate for at least 1 hour, or until chilled (this allows the flavors to meld beautifully).

Serve: Once ready to serve, give the soup a good stir. Pour into bowls and garnish with fresh cilantro or basil leaves. You might also drizzle a little more coconut milk on top for extra creaminess.

Enjoy: This refreshing soup is perfect as a light lunch or a starter for a summer dinner.
