4 boneless salmon fillets (6 oz each)

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/4 cup sour cream

3 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Olive oil, for drizzling

Lemon wedges, for serving

Instructions
 

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

    In a medium skillet, heat a splash of olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).

      Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.

        In a mixing bowl, combine the softened cream cheese, grated Parmesan cheese, sour cream, lemon juice, garlic powder, onion powder, salt, and pepper. Mix until well combined.

          Stir the cooled spinach mixture into the cream cheese mixture until evenly mixed.

            Prepare the salmon: Place the salmon fillets skin-side down on the prepared baking sheet. Use a sharp knife to make a pocket in each fillet by cutting horizontally through the thickest part, being careful not to cut all the way through.

              Stuff each salmon fillet generously with the creamy spinach mixture.

                Drizzle the top of the stuffed salmon with olive oil and sprinkle with additional salt and pepper if desired.

                  Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
