Ingredients

8 oz fettuccine pasta

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

Sauté Garlic and Spinach: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped spinach and cook until wilted, about 2-3 minutes.

Make the Alfredo Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the garlic powder, onion powder, and crushed red pepper flakes. Allow the cream to simmer gently for about 2 minutes.

Add Cheese: Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water until the desired consistency is reached.

Combine Pasta and Sauce: Add the cooked fettuccine to the skillet with the Alfredo sauce. Toss to coat the pasta evenly. Season with salt and pepper to taste.

Serve: Plate the creamy spinach pasta and garnish with fresh basil leaves and extra Parmesan cheese.
