Creamy Spinach Artichoke Pasta

8 oz (225g) pasta (fettuccine or penne works best)

1 tablespoon olive oil

3 cloves garlic, minced

1 cup fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and quartered

1 cup heavy cream

½ cup cream cheese, softened

1 cup grated Parmesan cheese

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Lemon zest (from 1 lemon, for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

      Add Spinach and Artichokes: Stir in the chopped spinach and cook until wilted, about 2 minutes. Then, add the quartered artichoke hearts and stir to combine.

        Make the Creamy Sauce: Lower the heat to medium-low, then add the heavy cream and softened cream cheese to the skillet. Stir until the cream cheese is fully melted and incorporated.
