Creamy Sausage and Potato Casserole

1 pound Italian sausage (mild or spicy, your choice)

4 large russet potatoes, peeled and thinly sliced

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

2 cups shredded sharp cheddar cheese

1 cup frozen peas (optional for color and nutrition)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, crumble the Italian sausage into the skillet and cook until browned, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside. Drain excess grease if necessary.

      Sauté Aromatics: In the same skillet, add the diced onion and garlic. Sauté until the onion becomes translucent, around 3-4 minutes.

        Make the Creamy Mixture: In a bowl, combine the heavy cream, chicken broth, thyme, paprika, salt, and pepper. Whisk until well combined.

          Layer the Casserole: In a greased 9x13 inch baking dish, start layering:

            - A layer of sliced potatoes, slightly overlapping.

              - A portion of the sautéed sausage mixture.

                - A sprinkle of shredded cheddar cheese.

                  - A drizzle of the creamy mixture.

                    - Repeat the layers until all ingredients are used, finishing with a layer of potatoes topped with creamy mixture and remaining cheese.

                      Add Peas: If using, sprinkle the frozen peas on top of the final layer of cheese. This will add both color and sweetness.
