Creamy Roasted Veggie Casserole

2 cups broccoli florets

2 cups cauliflower florets

1 cup diced bell peppers (red, yellow, or orange)

1 cup diced zucchini

1/2 cup sweet corn (fresh or frozen)

1 small red onion, diced

3 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped (for garnish)

Optional: 1 cup cooked pasta (e.g., penne or rotini) for a heartier casserole

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Vegetables: On a large baking sheet, toss the broccoli, cauliflower, bell peppers, zucchini, sweet corn, and red onion with olive oil, garlic, Italian herbs, salt, and black pepper. Spread them out evenly and roast in the preheated oven for about 25-30 minutes, or until they are tender and beginning to caramelize. Stir halfway through cooking for even roasting.

      Prepare the Cream Sauce: In a medium saucepan over low heat, combine the heavy cream, half of the mozzarella, and all of the Parmesan cheese. Stir until the cheeses are melted and the mixture is smooth, about 5 minutes. Season with a pinch of salt and pepper to taste.

        Combine Ingredients: In a large mixing bowl, combine the roasted vegetables with the cooked pasta (if using). Pour the creamy cheese sauce over the veggie mixture, stirring gently to combine everything evenly.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish. Sprinkle the remaining mozzarella cheese evenly over the top.

            Bake: Bake in the oven for another 15-20 minutes, until the cheese on top is bubbly and golden brown.

              Garnish and Serve: Once baked, remove from the oven and allow to cool for a few minutes. Garnish with fresh parsley before serving.
