Creamy Roasted Garlic Mashed Potatoes

Ingredients
  

2 pounds russet potatoes, peeled and cubed

1 medium head of garlic

1 tablespoon olive oil

1/2 cup unsalted butter, softened

1 cup heavy cream (you can substitute with milk for a lighter version)

Salt, to taste

Black pepper, to taste

Fresh chives or parsley, chopped (for garnish, optional)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Cut the top off the garlic head, exposing the individual cloves. Drizzle with olive oil and wrap tightly in aluminum foil.

        - Place the wrapped garlic on a baking sheet and roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized. Remove from the oven and allow to cool slightly.

          Cook the Potatoes:

            - While the garlic is roasting, place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt.

              - Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes, or until the potatoes are fork-tender. Drain well.

                Mash the Potatoes:

                  - In the same pot, combine the drained potatoes with the softened butter.

                    - Squeeze the roasted garlic cloves out of their skins directly into the potatoes. Use a potato masher or ricer to mash until smooth and creamy.

                      Add Cream and Season:

                        - Gradually stir in the heavy cream until you reach your desired creaminess.

                          - Season with salt and black pepper to taste, mixing well to integrate all the flavors.

                            Serve:
