Creamy Roasted Garlic Cauliflower Pasta

1 medium head of cauliflower, cut into florets

5-6 cloves of garlic, unpeeled

2 tablespoons olive oil

Salt and pepper, to taste

8 ounces pasta (linguine or fettuccine work well)

1 cup vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free version)

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese (omit for vegan)

Fresh parsley, chopped (for garnish)

Lemon zest (for garnish)

Instructions
 

Roast the Vegetables: Preheat your oven to 400°F (200°C). Arrange the cauliflower florets and unpeeled garlic cloves on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown. Remove from the oven and let cool slightly.

    Cook the Pasta: Meanwhile, cook your pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Blend the Sauce: Once the roasted garlic is cool enough to handle, carefully squeeze the garlic cloves out of their skins into a blender or food processor. Add the roasted cauliflower, vegetable broth, heavy cream, dried thyme, red pepper flakes (if using), and a pinch of salt and pepper. Blend until smooth and creamy. If the mixture is too thick, add a bit of the reserved pasta water until desired consistency is reached.

        Combine Pasta and Sauce: In the pot used for the pasta, add the cooked pasta and pour over the creamy cauliflower sauce. Toss everything together until the pasta is well-coated. If needed, add more reserved pasta water to achieve your preferred creaminess.

          Add Cheese: Stir in the grated Parmesan cheese (if using) and mix well until melted and combined. Adjust seasoning with salt and pepper as desired.
