1 head of garlic

2 tablespoons olive oil

12 oz fettuccine pasta

2 cups heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon nutmeg (optional)

2 tablespoons unsalted butter

1 tablespoon chopped fresh parsley (for garnish)

Extra Parmesan cheese (for serving, optional)

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap it in aluminum foil. Roast in the preheated oven for 30-35 minutes until the cloves are soft and caramelized. Once cooled, squeeze the garlic out of the skins into a small bowl and mash it into a pulp.

    Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.

      Make the Alfredo Sauce: In a large skillet over medium heat, melt the butter and the remaining tablespoon of olive oil. Add the roasted garlic and sauté for 1-2 minutes, allowing the flavors to meld. Then pour in the heavy cream and bring to a gentle simmer.
