4 cups fresh broccoli florets

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons olive oil

4 cups vegetable or chicken broth

1 cup heavy cream (or coconut milk for a vegan option)

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon nutmeg

Optional garnish: toasted pine nuts, croutons, or fresh herbs

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Roast the Broccoli: On a baking sheet, toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Spread them out in a single layer and roast for about 20 minutes, or until they are tender and slightly charred. Remove from the oven and set aside.

      Sauté Aromatics: In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Add Broccoli and Broth: Stir in the roasted broccoli, followed by the vegetable (or chicken) broth. Bring the mixture to a gentle simmer and let it cook for about 10 minutes to combine the flavors.
