Creamy Pesto Chicken Penne

8 oz penne pasta

1 lb chicken breast, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Optional: crushed red pepper flakes, for heat

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and golden brown. Transfer the chicken to a plate and set aside.

      Create the Creamy Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant but not browned. Pour in the heavy cream, stirring to combine, and bring to a gentle simmer.

        Add Pesto and Cheese: Stir in the basil pesto and grated Parmesan cheese. Continue to stir until the cheese has melted and the sauce is smooth. Season to taste with additional salt and pepper if needed.

          Combine Ingredients: Add the cooked penne pasta, sautéed chicken, and halved cherry tomatoes to the skillet. Toss everything together gently until the pasta and chicken are well coated in the creamy pesto sauce.
