12 oz fusilli pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (red, yellow, or orange), diced

1/2 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/2 cup green peas (fresh or frozen)

1 cup Greek yogurt

1/4 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon fresh lemon juice

Zest of 1 lemon

Salt and pepper to taste

A sprinkle of cayenne pepper (optional, for heat)

Parmesan cheese, grated (for topping)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, add the fusilli pasta. Cook according to package instructions until al dente. Drain and rinse under cold water to cool the pasta and stop the cooking process. Set aside.

    Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced bell pepper, finely chopped red onion, chopped parsley, basil, and green peas. Toss well to combine.

      Make the Creamy Dressing: In a separate bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, lemon zest, salt, and pepper. For an extra spicy kick, add a sprinkle of cayenne pepper. Mix until smooth and creamy.

        Combine: Add the cooled pasta to the bowl with the vegetables. Pour the creamy dressing over the pasta mixture and gently toss everything together until the pasta and veggies are evenly coated in the dressing.
