Creamy One-Pot Garlic Parmesan Chicken Pasta

1 pound (450g) boneless, skinless chicken breasts, diced

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon Italian seasoning

2 cups low-sodium chicken broth

1 cup heavy cream

8 ounces (225g) uncooked pasta (penne or fettuccine work well)

1 cup grated Parmesan cheese

Salt and freshly ground pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for a bit of heat

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the diced chicken with salt, pepper, and Italian seasoning. Add the chicken to the pot and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook the Aromatics: In the same pot, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent and fragrant.

      Deglaze & Add Liquid: Pour in the chicken broth, scraping the bottom of the pot to release any browned bits. Bring to a simmer.

        Add the Pasta: Once the broth is simmering, add the uncooked pasta to the pot. Stir well to combine and ensure the pasta is submerged in the liquid.

          Simmer: Cover the pot and reduce the heat to medium-low. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

            Stir in the Cream and Cheese: Lower the heat and stir in the heavy cream and grated Parmesan cheese. Return the cooked chicken to the pot and mix everything well. Continue to cook for an additional 2-3 minutes until the sauce is creamy and heated through.

              Adjust Seasoning: Taste the pasta and adjust seasoning with additional salt, pepper, or red pepper flakes if desired.

                Garnish & Serve: Remove from heat, sprinkle with chopped parsley, and serve immediately while hot. Enjoy!
