1 lb (450g) boneless, skinless chicken breasts, diced

8 oz (225g) whole wheat pasta (penne or fusilli works best)

2 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup vegetable or chicken broth

1 cup heavy cream or coconut cream for a dairy-free option

1 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 tbsp olive oil

1 tsp dried oregano

1 tsp salt (to taste)

1/2 tsp black pepper (or to taste)

1/4 tsp red pepper flakes (optional for heat)

Fresh basil, for garnish

Sauté the Chicken: In a large pot or deep skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and oregano. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the pot and set it aside.

    Cook Aromatics: In the same pot, add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Add Pasta and Broth: Pour in the vegetable or chicken broth and bring to a simmer. Add the whole wheat pasta and red pepper flakes (if using). Stir everything together, ensuring the pasta is submerged in the liquid.
