Ingredients

2 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces

1 tablespoon olive oil

3 cloves garlic, minced

1 cup uncooked fettuccine pasta

2 cups low-sodium chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups broccoli florets

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until golden brown and no longer pink, about 5-7 minutes. Remove the chicken from the pot and set aside.

Cook the Garlic: In the same pot, add the minced garlic and sauté for about 1 minute, until fragrant.

Add Pasta and Broth: Stir in the uncooked fettuccine, chicken broth, and Italian seasoning. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10 minutes, stirring occasionally, until the pasta is al dente.

Incorporate Broccoli: Add the broccoli florets to the pot, cover, and cook for an additional 5 minutes, or until the broccoli is tender-crisp and the pasta has absorbed most of the liquid.

Make it Creamy: Lower the heat, and stir in the heavy cream and Parmesan cheese until melted and creamy. If the sauce becomes too thick, add a splash of chicken broth to reach your desired consistency.

Combine and Serve: Return the cooked chicken to the pot, stirring to combine. Adjust seasoning with salt and pepper to taste. Serve hot, garnished with fresh parsley. Enjoy your delicious one-pot meal!
