Creamy Mushroom Spinach Lasagna

9 lasagna noodles (uncooked)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces fresh cremini mushrooms, sliced

5 ounces fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

2 cups ricotta cheese

1 large egg

1 cup grated Parmesan cheese, divided

3 cups marinara sauce

2 cups shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes. Stir in garlic and cook for an additional minute until fragrant.

      Add Mushrooms: Add sliced mushrooms to the skillet and cook until they are tender and browned, about 5-7 minutes. Then, add the fresh spinach, oregano, basil, salt, and pepper. Cook until the spinach wilts, about 2-3 minutes. Remove from heat and let cool slightly.

        Prepare Cheese Mixture: In a medium bowl, combine the ricotta cheese, egg, and 1/2 cup of grated Parmesan cheese. Mix until smooth and set aside.

          Layer the Lasagna: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Place 3 lasagna noodles on top. Spread half of the ricotta mixture over the noodles. Then, evenly layer half of the sautéed mushrooms and spinach mixture. Sprinkle 1 cup of mozzarella over the top.

            Repeat Layers: Add another layer of marinara sauce, followed by 3 more noodles, the remaining ricotta mixture, the rest of the mushroom and spinach mixture, and another cup of mozzarella cheese. Top with the final layer of noodles, the remaining marinara sauce, and sprinkle the remaining mozzarella and Parmesan over the top.

              Cover and Bake: Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray) and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 20 minutes, or until the cheese is bubbly and golden brown.

                Cool and Serve: Once baked, let the lasagna cool for about 10-15 minutes. Garnish with fresh basil leaves, if desired, and then slice and serve!
