Ingredients

1 cup Arborio rice

4 cups vegetable or chicken broth

1 cup fresh mushrooms (such as cremini or shiitake), sliced

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup dry white wine

1/2 cup grated Parmesan cheese

1/4 cup heavy cream

2 tablespoons olive oil

2 tablespoons unsalted butter

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Broth: In a small saucepan, heat the vegetable or chicken broth over medium heat. Keep it warm but not boiling.

Sauté the Aromatics: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and sauté for about 3 minutes until translucent. Then, add the garlic and sauté for an additional 30 seconds until fragrant.

Cook the Mushrooms: Add the sliced mushrooms to the skillet and cook for about 5 minutes, stirring occasionally until they are golden and tender. Season with salt and black pepper.

Toasting the Rice: Stir in the Arborio rice to the skillet, allowing it to toast for about 2 minutes, stirring continuously. This will help enhance the nuttiness of the rice.

Deglaze with Wine: Pour in the dry white wine, stirring constantly until it's mostly absorbed by the rice.

Add Broth Gradually: Begin adding the warm broth one ladle at a time, stirring frequently. Allow the rice to absorb the liquid before adding more, continuing this process for about 15-20 minutes until the rice is creamy and slightly al dente.

Finish the Risotto: Once the rice is cooked to your desired texture, stir in the butter, heavy cream, and grated Parmesan cheese. Mix until the risotto is creamy and well combined. Taste and adjust seasoning with additional salt and pepper if needed.

Garnish and Serve: Remove from heat, and let it rest for a minute. Serve hot, garnished with freshly chopped parsley for a pop of color.
