4 cups vegetable broth

1 cup fresh spinach, roughly chopped

1 cup mushrooms (button or cremini), sliced

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup heavy cream (or coconut cream for a vegan option)

2 tablespoons olive oil

2 tablespoons unsalted butter (or vegan butter)

Salt and black pepper to taste

Fresh parsley, chopped, for garnish

Prepare the Broth: In a small saucepan, heat the vegetable broth over low heat—keep it warm but not boiling.

    Sauté Aromatics: In a large non-stick skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for another 1 minute until fragrant.

      Cook the Mushrooms: Stir in the sliced mushrooms and cook for about 5-6 minutes until they become soft and start to release their juices. Season with a pinch of salt and pepper.

        Toast the Rice: Add the Arborio rice to the skillet, stirring it into the mixture for about 1-2 minutes until the grains are slightly translucent around the edges. This toasting process enhances the flavor of the rice.

          Deglaze with Wine: If using, pour in the white wine and stir continuously until it is mostly absorbed by the rice.

            Add Broth Gradually: Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding more. This process will take about 18-20 minutes.

              Incorporate Spinach and Cream: Once the rice is cooked al dente and creamy, stir in the chopped spinach, the remaining tablespoon of butter, and the heavy cream. Mix until the spinach wilts and everything is creamy and well combined.

                Finish with Cheese: Turn off the heat and fold in the grated Parmesan cheese (or nutritional yeast). Check for seasoning and adjust with salt and pepper as needed.
