For the Mashed Cauliflower:

1 large head of cauliflower, chopped into florets

3 tablespoons unsalted butter

½ cup cream cheese, softened

½ cup heavy cream

Salt and pepper to taste

2 cloves garlic, minced

1 teaspoon onion powder

1 tablespoon fresh chives, chopped (or 1 teaspoon dried)

For the Herb Gravy:

2 tablespoons olive oil

2 tablespoons all-purpose flour

2 cups vegetable broth

1 tablespoon soy sauce (or tamari for a gluten-free option)

1 teaspoon Worcestershire sauce (or vegan alternative)

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley or chives, for garnish

Prep the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until fork-tender, about 10-12 minutes. Drain and set aside.

    Make the Mashed Cauliflower: In the same pot, add the cooked cauliflower, butter, cream cheese, heavy cream, minced garlic, onion powder, salt, and pepper. Using a potato masher or an immersion blender, mash or blend until creamy and smooth. Stir in fresh chives, adjusting seasoning to taste.

      Prepare the Herb Gravy: In a medium saucepan, heat olive oil over medium heat. Sprinkle in the flour and whisk continuously for about 2 minutes to create a roux, ensuring it doesn’t brown.

        Add Liquid Ingredients: Gradually whisk in the vegetable broth, ensuring there are no lumps. Stir in the soy sauce, Worcestershire sauce, dried thyme, and rosemary.

          Simmer the Gravy: Bring the mixture to a simmer, stirring constantly until it thickens, about 5-7 minutes. Season with salt and pepper to taste.

            Serve: Spoon the creamy mashed cauliflower onto plates and drizzle generously with the herb gravy. Garnish with fresh parsley or extra chives.
