Creamy Jalapeño Firecrackers

12 large jalapeño peppers

8 oz (225 g) cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup crumbled feta cheese

2 cloves garlic, minced

1 tbsp fresh cilantro, chopped

1 tsp smoked paprika

1/2 tsp ground cumin

1/4 tsp cayenne pepper (optional, for extra heat)

12 strips of crispy bacon, cut in half

1 tbsp olive oil

Salt and pepper to taste

1/4 cup of BBQ sauce, for drizzling (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Jalapeños: Carefully slice each jalapeño in half lengthwise and remove the seeds and membranes (use gloves to prevent irritation). Set aside.

      Make the Creamy Filling: In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, crumbled feta cheese, minced garlic, chopped cilantro, smoked paprika, ground cumin, and cayenne pepper. Mix until all ingredients are thoroughly combined. Season with salt and pepper to taste.

        Fill the Jalapeños: Use a spoon or pipette to generously fill each jalapeño half with the creamy cheese mixture.

          Wrap with Bacon: Take a half strip of bacon and wrap it around each stuffed jalapeño, securing it with a toothpick if necessary. Repeat until all jalapeños are wrapped.

            Drizzle with Olive Oil: Place the filled and wrapped jalapeños on the prepared baking sheet. Drizzle with olive oil to help the bacon crisp up during baking.

              Bake Them: Bake the jalapeños in the preheated oven for 25-30 minutes, or until the bacon is crispy and the cheese is bubbly.

                Serve and Enjoy: Remove from the oven and let them cool slightly. Serve warm, drizzled with BBQ sauce if desired, and enjoy a spicy, creamy treat!
