Creamy Greek Pasta Bake

12 oz (340 g) penne or rigatoni pasta

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup baby spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup feta cheese, crumbled

1 cup Greek yogurt

½ cup heavy cream

1 cup grated mozzarella cheese

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 3-4 minutes. Stir in the minced garlic and red bell pepper, cooking for another 2-3 minutes.

        Add Spinach and Tomatoes: Add the cherry tomatoes, baby spinach, oregano, and thyme to the skillet. Stir until the spinach wilts, approximately 2-3 minutes. Season with salt and pepper.

          Combine Ingredients: In a large bowl, combine the cooked pasta, sautéed vegetable mixture, crumbled feta cheese, Greek yogurt, heavy cream, and half of the grated mozzarella. Mix well until all ingredients are combined.

            Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish, spreading it evenly. Top with the remaining grated mozzarella cheese.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

                Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving. Enjoy your creamy Greek pasta bake!
