Ingredients

12 oz fresh or frozen ravioli (spinach or cheese-filled)

2 tablespoons olive oil

4 cloves garlic, minced

1 cup fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan for serving

Instructions

Cook the Ravioli: In a large pot of boiling salted water, cook the ravioli according to package instructions until al dente (usually around 4-5 minutes for fresh ravioli). Once cooked, drain and set aside, reserving about 1/2 cup of the cooking water.

Sauté Garlic and Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant and golden. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.

Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine with the garlic and spinach. Allow the mixture to simmer gently for a couple of minutes.

Add Cheese and Season: Stir in the grated Parmesan cheese, mixing until the cheese has melted and the sauce is creamy. Season with salt, pepper, and crushed red pepper flakes (if using) to taste.

Combine Ravioli and Sauce: Gently add the cooked ravioli to the skillet, tossing to coat them in the creamy garlic spinach sauce. If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is achieved.

Serve: Divide the creamy garlic spinach ravioli among serving plates. Garnish with fresh basil leaves and additional grated Parmesan cheese.
